1 3/4 cups sugar
1 quart milk
2 teaspoons vanilla extract
1/2 cup chopped pecans

Butter a 4-by-8-inch loaf pan and set aside.

Place sugar and milk in a large heavy saucepan.Bring to a boil and
cook,stirring continuously,until you can see the bottom of the pan
when you stir the candy.Make sure your mixture is stiff and
well-cooked, but not burned.Candy needs to be well-cooked in order
for it to harden properly.Cooking time is around 1 hour. Add vanilla
extract to the candy,and stir to combine well.Pour candy into pan.
Press pecans onto top of candy while still hot.Allow to cool,then
cut into pieces.Makes 1 pound.
