Subject: Battered Fish

3/4 cup flour
1 egg yolk
1/4 cup beer
1/4 cup water
1/2 teaspoon salt
Oil for frying
1 egg white
1 pound haddock or flounder,boned,skinned,and cut into 3-by-5-inch
pieces

1.Place the flour in a medium bowl.In another bowl, combine the egg
yolk,
beer, water and salt.Pour egg mixture into flour,whisking until
smooth.
Let the batter rest for 30 minutes.

2.Fill a deep fryer or other pot with oil to a depth of at least 3
inches,
allowing room for oil to bubble up during frying.Heat oil to 375
degrees.
(If you don't have a deep-fryer,measure the temperature with a candy
or fat
thermometer.)

3.Beat the egg white until soft peaks form when the beaters are
lifted,
then fold it into batter.

4.Pat the fish dry with paper towels.Dip fish in batter, lower it
gently
into hot oil,and fry until golden brown,about 4 to 5 minutes.(Fish
should
begin to flake when cut with a fork.)

5.Remove fish from oil with a slotted spoon,skimmer or wire basket,
letting excess oil drip back into pot.Drain on paper towels.Keep warm
in a
275-degree oven until time to serve.
