Subject: Old-Fashioned Deviled Eggs

4 large hard-cooked eggs,peeled and halved lengthwise 21/2 tablespoo=
ns
mayonnaise
1 1/2 teaspoons Dijon mustard
Hot red-pepper sauce to taste
Salt and freshly ground pepper to taste
2 tablespoons minced fresh chives

1.Carefully remove the egg yolks from the whites,placing the yolks =
in a
bowl.Set the whites,cut side up,on a plate.

2.With the back of a fork,mash the yolks.Add the mayonnaise,mustard
rd,hot
pepper sauce,salt and pepper.Mash with a fork until blended.Stir i=
n the
chives.

3.Using a teaspoon or a star-tipped pastry bag,fill the whites with=
the
yolk mixture,mounding the tops.

4.Serve at room temperature or chilled.
