Subject: Squash Pickles

6 cups sliced yellow squash
6 cups sliced zucchini
2 cups sliced onion(purple onions give more color)
1 tablespoon pickling salt
3 cups white vinegar(5 percent acidity)
4 cups sugar
1 medium size bell pepper,diced
1 medium size red pepper,diced
2 teaspoons celery seeds
2 teaspoons mustard seeds

Combine first 3 ingredients in a large bowl;sprinkle with pickling
salt,and let stand 1 hour.

Drain and pack into hot jars.

Bring vinegar and next 5 ingredients to a boil in a large saucepan.
Pour hot mixture into jars,filling to within 1/2 inch from top.
Remove air bubbles;wipe jar rims.Cover at once with metal lids;
screw on bands.

Process in a boiling water bath 20 minutes.
