Subject: OVERNIGHT YEASTY PANCAKES

1 1/2 cups milk
1/4 cup butter
1 pkg.active dry yeast
2 Tbsp.sugar
1/2 cup warm water
2 cups flour
1/2 tsp.salt
2 eggs

The night before:Heat the milk and butter together until butter
melts,then cool to lukewarm.Dissolve the yeast and sugar in the
warm water,add lukewarm milk mixture and stir until blended.In a
separate bowl,whisk flour and salt together.Add yeast mixture
stirring just until combined.Cover with plastic wrap and refrigerate
overnight.(See note below.)In the morning:Remove batter from
refrigerator and allow to rest at room temperature for 20 minutes.
Stir down the batter and add the beaten eggs.Warm griddle over
medium heat and coat lightly with oil.Use about one-fourth cup
batter for each pancake and grill until lightly browned on the bottom
and bubbly on top before flipping.(Yeast raised pancakes require
longer cooking at a lower temperature than the regular kind.)Makes
about 12 pancakes.

Note:If you prefer,allow batter to rest at room temperature for 2
hours(rather than refrigerating overnight before grilling pancakes,
but they will not be as light and yeasty.
