Subject: PUMPKIN SOUP

1 large onion,chopped
1/4 cup butter
1/2 tsp.curry powder
16 oz.can pumpkin
1 1/2 tsp.salt
2 cups half-and-half
2 1/2 cup chicken broth
Chopped parsley,sour cream or ground cinnamon(optional)

Saute onion in butter until tender.Sprinkle with curry powder and
saute an additional 2 minutes.Stir in pumpkin and salt,add
half-and-half,stirring constantly.Stir in broth and heat
thoroughly.If desired, garnish with parsley,sour cream or cinnamon.
Makes 8 servings.
