Subject: SHERRIED PUMPKIN CHIFFON PIE

1 pkg.gelatin
1/4 cup cold water
3 eggs,separated
1 cup pumpkin
1/2 cup sherry wine
1 cup sugar,divided
1/4 tsp.salt
1/2 tsp.cinnamon
1/4 tsp.nutmeg
1/4 tsp.ginger
Baked pie shell
Whipped cream,optional

Soften gelatin in cold water.Beat egg yolks in the top of a double
boiler.Stir in pumpkin,sherry,1/2 cup sugar,salt,cinnamon,
nutmeg and ginger.Cook over water,stirring constantly,for five
minutes.Remove from heat,add softened gelatin,stir until
dissolved.Chill.Beat egg whites with remaining 1/2 cup of sugar
until stiff.Fold egg whites into pie mixture.Pour into baked pie
shell.Chill for several hours.Optional:top with whipped cream
flavored with either sherry or ginger syrup.
