Subject: QUICK-FIX CHICKEN VEGETABLE SOUP

1 cup chopped onion
1 Tbsp.extra-virgin olive oil
14 1/2 oz. can chicken broth
2 cups water
White pepper and salt to taste
1 medium potato,peeled,diced
1 cup frozen cut green beans
10 oz.pkg.frozen spinach,thawed,squeezed
1 1/2 cups diced cooked chicken(can use canned)
Garlic Sauce(optional)see below

In a heavy pot or Dutch oven,saute onions in olive oil for 2 to 3
minutes until tender.Add broth,water,pepper and salt.Bring to a
boil,simmer,covered,for 5 minutes.Add remaining ingredients
except Garlic Sauce.Return mixture to a boil.Simmer, uncovered, 5
minutes until all ingredients are thoroughly heated.Serve with
Garlic Sauce if desired.Makes 6 servings.

Garlic Sauce:Blend 1/4 cup softened butter,1/4 cup chopped parsley,
1 tablespoon lemon juice and 2 garlic cloves until smooth. Add 1/3
cup grated Parmesan cheese;process until blended.Stir in 1/4 tsp.
pepper.Makes about 1/3 cup.
