Subject: PEAR TART

* 1 pie crust
* 2 ripe pears,peeled and sliced
* 1 organic lemon,juiced, rind grated
* 1/4 cup fructose OR 1/2 cup brown sugar
* 1/4 teaspoon coriander or nutmeg
* 1/4 teaspoon cinnamon

Line a shallow tart pan with crust and crimp edges.

In a bowl,gently toss pears with 1 tablespoon fresh lemon juice and
the grated rind.Sprinkle with fructose or sugar and spices, and toss
gently to coat.

Layer fruit over crust and bake at 350 degrees until golden brown(40
to 50 minutes).Serve hot.
