Subject: Foolproof Caramel Sauce

1/3 cup water
1 cup granulated sugar
1 teaspoon lemon juice
1 tablespoon corn syrup
1 cup whipping cream,heated to boiling in microwave oven (about 1 1/2 minutes)
11/2 tablespoons butter
1 teaspoon vanilla

In a 3-quart heavy saucepan,combine water,sugar,lemon juice and
corn syrup.Cook over medium high heat,whisking constantly until
sugar dissolves and mixture comes to a boil.

Boil over medium to medium-high heat,without stirring,6 to 7
minutes until a golden amber color.Remove from heat.Slowly and
carefully whisk in cream mixture.
