Subject: Chocolate Banana Nut Cake

2 1/4 cups cake flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon salt
2/3 cup shortening
11/2 cups sugar
2 large eggs
2 ounces chocolate,melted
1 teaspoon vanilla
1 cup mashed ripe bananas
1/2 cup sour milk(see note)
3/4 cup chopped almonds(plus extra for garnish)
Buttercream icing:
1/2 cup solid vegetable shortening
1/2 butter or margarine
1 teaspoon vanilla extract
4 cups sifted confectioner's sugar
2 tablespoons mil

Sift cake flour,baking powder,soda and salt together.In mixer,
cream shortening with sugar until fluffy.Add eggs,one at a time,
beating thoroughly after each.Add chocolate and mix thoroughly.Stir
in vanilla.Add sifted dry ingredients alternately with bananas,
almonds and milk in small amounts,beating well after each addition.
Pour into 2 greased 9-inch round cake pans and bake at 350 degrees
for 30 to 35 minutes,or until toothpick inserted into center comes
out clean.

To make the frosting,cream butter and shortening in mixer. Add
vanilla.Gradually add sugar,one cup at a time,beating well on
medium speed.Scrape sides and bottom of bowl often.Add milk and
beat until light and fluffy.Frost cake when cool.Top with chopped
almonds.

Note:1 cup of milk plus 1 tablespoons of lemon juice or vinegar
serves as a substitute for sour milk.

Yield:12 servings
