Subject: Walnut Rice

1/2 cup long grain white rice
1 teaspoon olive oil
3 tablespoons fat-free,low-salt chicken broth
1 garlic clove,crushed
1/4 cup chopped fresh parsley
2 tablespoons chopped walnuts
Salt and freshly ground black pepper

Bring a large saucepan of water to a boil.Add rice and cook 10
minutes.Meanwhile mix olive oil,broth and garlic together. Drain
rice.Toss with broth mixture,parsley and walnuts.Add salt and
pepper to taste.

Yield:2 servings
