Subject: Brandied apple pudding

1 tablespoon butter or margarine
1 tablespoon granulated sugar
1 cup sifted all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup packaged bread crumbs
1/4 cup butter or margarine,softened
1/2 cup firmly packed brown sugar
1 egg
1/4 cup milk
1/4 cup brandy or apple cider
1/4 cup molasses
1 cup baking apple,pared,cored and chopped
1/3 cup raisins

For hard sauce:
3 tablespoons butter or margarine
3/4 cup sifted confectioner's sugar
3 tablespoons heated brandy or rum

To prepare pudding:Butter a 1-pound coffee can with the tablespoon
of butter.Sprinkle in granulated sugar.Cover with plastic top.
Shake until sides and bottom are well coated with sugar. Sift flour,
baking powder and baking soda onto wax paper;stir in bread crumbs.

Beat 1/4 cup butter,brown sugar and egg in large bowl until mixture is smooth.

Combine milk,brandy and molasses in a cup.Add to butter mixture
alternately with flour mixture,blending well after each addition.
Stir in the chopped apple and raisins.Pour batter into prepared can.
Cover and steam two hours.

To steam,first,tear off a 12-inch square of aluminum foil. Make a
pouch in the foil with your fist,center the foil over the can and
secure with a rubber band or string.Place the can on a trivet or
ring of foil in a large pot.Pour about 1 inch of boiling water into
pot and cover.Heat to boiling, then lower to just simmering.Cover
and steam 2 hours.

To prepare hard sauce:

Melt butter in a small saucepan.Remove from heat and stir in sugar
and brandy or rum.Beat until smooth.

When pudding is done,serve with hard sauce.Or cream if you prefer.
