Do you have good power and acceleration at highway speeds? If so, then your fuel pressure and volume should be okay.
Any chance your EGR valve is "sticky"? The reason is that it will open up during highway, or steady state driving, and if it is too slow to close when you slow suddenly, then it will continue to flow exhaust gas, reducing the fresh air/fuel ratio. At idle and during deceleation, the EGR valve should completely close - if not, it might be sort of "smothering" the engine. Every engine design has different control strategies on reducing emissions, but the physics are that if the air fuel ratio gets too low, the combustion event will not occur.
Other ideas: if it is carbureted, you might have a float that is slightly sunk or out of adjustment on height. You might have a dashpot problem on the carb as well. The dashpot is there to prevent the throttle from slamming shut when you lift your foot very quickly. This is for emissions. Also, are you sure the static timing is correct? (i.e. the belt is back on right and the distributor timing is correct?) If the timing is off a bit, that might explain your power complaint, but it doesn't really explain the stalling. Of course, depending on how well you lapped the valves, it may be that it will take a few miles for the seats and valves to mate with each other. I assume you set the cold valve lash to 0.005-0.007" on the intakes, and 0010-0.012" on the exhausts? Don't want to hold any valves open.
I'd start by checking the timing closely, then the EGR valve....good luck, glen
