I'd lean toward a carb problem also. There are many things that it could be in the carb, but it sounds to me like you're getting an interruption in fueling, or potentially too much fuel.

Some possibilities: The anti-dieseling solenoid may be intermittent shutting off fueling. This is a solenoid that cuts off all fuel to the carb venturi when the engine ignition is shut off. If it was intermittently failing or if the voltage to it was intermittent, you might get this scenario. Some people call it the primary slow mixture cutoff valve. However, I believe this only cuts off the fuel through the idle circuit, not the high speed circuit. Worth a look, though.

You might also have a carb float that is sunk - does it smell like excess fuel when it happens?

You might have some hard particles of something in the carb bowl that is occasionally blocking the fuel delivery to the venturi.

You might have a fuel pump that is somehow running intermittently.

There are probably several other scenarios as well, including ignition related problems.

Really hard to be specific without seeing it in person, but I'd start with rebuilding the carb if it was my car since you feel that manipulation of the accelerator pedal does affect the ability of the car to run. Rebuild kits are not too outrageous, and carb rebuild is not overly difficult - just tedious and you have to draw lots of pictures of where things go.
