I am also homeschooling a 7th grader and 1 thing that we do each new session is sit down and have a "brainstorming" time. Every body in the family gets to throw out any idea or subject that interests them. And I mean anything. We have had topics like Bigfoot, thunderstorms, musicians. We write down each topics on lined paper and put it in a 3ring, then every a.m. each kid has 30 minutes of free-writing. they pick a topic from the list, make a note of the date next to the topic (so they don't write about the same thing over and over). I check the entries usually once a week to make sure they are actually doing it, I make notes, and suggestions but i don't correct spelling, grammar etc. Now, this is just how I've done it because it works for different grade levels at the same time. and at the end you have writing samples to gauge progress for each kid. (p.s. if they help make list of subjects/topics they can never complain about what they have to write about). I hope this helps.
