Hmmmm....this a good one!
V'Ger was very powerful, but that was comparing it to E-nil(refit) level ships. At that time, the E-nil refit was cutting edge tech, and maybe even the most powerful ship known to the Federation. It's shields were certainly a lot better than the comperable Klingon ships. However, unless you believe in the uber-connie, that should mean that a modern Federation ship (and therefore most large imperial ships) should be able to survive at least one hit from V'Ger.
Having said that, V'Ger was able to neutralise the entire Earth defence network, and logically that should be stronger than a single starship (if not, what's the point having it?). In that case, maybe the shot it fired at the E-nil was not its most powerful. It also seemed to learn from all its encounters, so maybe it would get stronger as time went on. However, that is unproven.
The final point would be whether ships could actually get to the central core if it didn't want to. The 'cloud' was stated to be "over 82 AUs in diameter. An AU is roughly 150 million km, so it would be around 12,300,000 km in diameter. Pretty big! The cloud was stated to be a twelfth power energy field (which given its size is amazing). Some calculations from ST:TMP DVD, have put the size of the 'core' at around 100km long by 35km wide. That would make it larger than any SW ship (apart from Death Stars obviously). However, size doesn't necessarily denote power.
Lacking any real data, I can only say that personally I doubt any Star Wars ship, short of a Death Star, would actually stand a chance alone against it. However, that is just a 'hunch'.
