I don't really know what I do Emily. This is my process including thoughts:
Eggs in the pan, add water, set it on the burner. Then turn the heat on. Enter thought process: Now how long do you boil eggs? Was it twenty mintues? Long enough to sing all the verses of count your many blessings? I think I read that somewhere. Then I flash back to one of the first storytelling "events" that I was going to tell at. It was for a year end thing at a grade school. I had several other things going on that night so I decided I was going to bake a potato in the microwave...now how long? I think 20 minutes. So I started it and went upstairs to do whatever else I was doing. When I came back, yikes! Have you ever seen charcoal come out of a microwave. I smelled like an ash tray going to a kids event. The microwave was never the same. Nooo that wasn't it....you were thinking of eggs remember?! Then I boil them for what I think is 20 minutes cool them in cold water and throw them back in the fridge after eating at least one warm to make sure they're cooked. Anyway that's what I do.
When I was pregnant it was the one high protein thing that I could always eat and so we'd go through about 4 dozen eggs a month. Mostly I would just peel and eat them. I love them with mustard on them. Squirt of mustard, take a bite squirt of mustard, take a bite....you get the idea. I am a mustard fiend though. Wade told me he has been thinking lately as he's walking out the door that it would sure be nice to have eggs already cooked again. So I guess we need to get back on track with that.

I thought of something else my cousin always did. He'd have veggies cut up in a container in the fridge, things like carrots and celery. They stayed fresh in the container with a little water and were easy to eat because they were already cut up. I never got really good at that, but would like to. Britt doesn't really eat anything but he loves to chew and spit out carrots so it really would be good to get away from the baby carrots....but....time!

Kiersten reminded me too of the potato pearls that you can get through the church. They're pretty tasty and the most instant of any potatoes I've ever had. Just add add hot water and stir with a fork. It's a comfort food for me and add corn or peas now that's major comfort!

Speaking of peas. If you take frozen peas and just place them in hot water (hot from the tap is sufficient) rinse through a few times until they're not frozen they taste really good and no cooking--big plus if it's hot outside. Another thing I really like is pilot biscuits, but they're really hard to find down here. There a form of hard tack---cracker really so they last a long time. My favorite kind come in a blue box with a sailor on them. They're unsalted and taste good with anykind of sandwich meat.

My sister also likes making puffs (as in a cream puff pre-cream) too and throwing them in the freezer. I don't know if I'd have done that while I was in school but now it's a fun and pretty easy treat that can be eaten as they are or filled with whatever you like. Lots of butter, but they're pretty easy.

One last thing. I love toasted almonds. You can buy a big bag of almonds at costco or the like for about $10. Then put them on a cookie sheet (single layer of almonds) and bake at 350 for about 3-5 minutes. Then I throw those in the freezer and pull them out when I want them to add to salad or just eat. I spend a lot of time on the road between here and Salt Lake or Ogden so I have a little "trail mix" of almonds, dried tart cherries, and mini marshmallows that gets me through without having to stop somewhere to eat.

Another easy chicken dish is Chicken Adobo but it really stinks up the house for years it feels like--wouldn't make friends with roomies I'm thinking. It's apple cider vinegar, soy sauce and garlic. It's fast though.

Mmmm you have me thinking about food. My little niece "planted" some old beans her mom gave her here and we've had the blessing of fresh green beens a couple times the last couple of weeks. It's so cool because she'd wanted to plant a garden so to get her out of her hair her mom gave her some old food storage beans. She just piled them in the garden. Then they moved out and we moved in. We were too busy with stuff to get rid of them and before we knew it they sprouted up and now they're producing. The miracle of the beans.

Thanks for asking about this em, even if I do get off track. I don't know if I told you guys on here or not, but my mother-in-law died last month. She's been a big help to us and we'd moved into this house to be a little closer to her so it's been a little tough. Anyway, it's nice to have something else to think about so thanks! :)
