Morning Roger:

I have tried cooking both ways as well & i find the steaks turn out real tough & i don't think it's me only, Barb has said the same thing. Now if i remember, when we were in compitition, Mike put a pork shoulder on when it was 3/4 frozen & am sure it took first place. Ribs, i have always thawed in bags submerged in water & have not found a difference. Maybe cause thier thin & the steak is thick & the shoulder is on for 14hrs. I will keep a close eye on this for the future & post the findings.
