Yup, this meat is so dern lean, that I think if you are serving any way other than jerky, it has to be cooked rare-med at most, and then into a diluted sauce, or I've also sliced thin, put into crock pot with onion slices and a nice, good quality strong beef stock to good results.

Saw you next door talking about smoking hard-boiled eggs. Dang it man! Do you have any idea what you are doing to my cholesterol level!!?? You get me going on these smoked olives, and now you got my interest piqued on these smoked eggs.
