The guy I bought the St-Louis from last time was not my regular butcher whom I go to once a month, get lotsa cuts and stick them in the freezer. I went and bought me 5 racks yesterday. He cut the ends off for me, chopped them up. I had a choice to keep them or leave them for the same price! He's Italian. He tells me you brown them up a little with your onions and garlic and it's what gives the taste to spaghetti sauce. I took them. He charged me 39$ for the whole lot. That works out to less than 8$ a rack. Maybe also we'll make chinese spareribs with sweet'sour sauce with them. I've been going to this butcher for almost 10 yrs now. He also cut me a nice deboned butt 3.5 lbs. Bought some merguez also. I'll try smoking them one day. All that talk of food gets me hungry.
