Now onto the meat cut.. if he is charging you more for the St. Louise cut, then buy the full rack and cut the breast bone off yourself with a butcher knife and cook it separately. Then you have both cuts. The only reason he is charging you more for the St. Louise cut is because he can't sell the breast bone separately...Bruce
