Nope! You didn't blow it - you learned from that cook so next time will be better. A little advice if I may - when you get too much fire in the WSM, shut down everything as you did, and for the next few minutes 'burp' it to reduce heat. 'burping' involves tilting the top to release heat for a few seconds every 1/2 minute or so. This will reduce the heat significantlly, and then after getting the heat where it should be, you can re-regulate the vents to maintain the temps you want.

IMHO the WSM is the best small cooker on the market today, and I believe that if you keep 'experimenting', you'll be regularly turning out excellent results.

PS. With respect to chicken/turkey I never cook without brining the bird. Holler if you are interested and I'll get you info - you won't be dissapointed!
