morning Tom, good to hear from you again. here is a very simple one that we make.

the ingredients are for each lb of meat

1 - level teaspoon coarse salt
1/2 - teaspoon fresh ground black pepper
3/4 - teaspoon coarse ground fennel seed
1/2 - teaspoon granulated garlic
1 - tablespoon skim milk powder
1/2 cup - cold water.

in a masons jar add all the spices and shake to mix. add to your ground pork (we use a minimum of 25% fat content) and mix in well. you can also use red or white wine as the liquid. i also like to let it blend in the fridge for a day before i stuff it. if you want to make it hot just add your hot pepper flakes or hot sauce to taste.
