Went out for dinner last night and it turned out that a Loblaws was just at other end of the plaza. They just had whole shoulders out at the time (almost 10 pm) so I snagged one of those. Just under 16 lbs and that was pretty much the average. I just don't have the space here to be doing curing and brining of the whole cuts, but wanna try that butt bacon, andouille sausage and/or the Canadian bacon you posted on Basso's forum. I printed all 3 of these recipes from their archives yesterday; now just keeping an eye for the proper cuts to go on sale!
