Unfortunately, I don't think any of us have found a Canadian source for this.... I got mine when a coworker went shopping in Michigan, pretty sure Reg gets it in NY and Bryan Brown got his when we were down to the Jack Daniels in Tennessee.... You may be able to substitute Prague Powder and Reg may have a conversion for that out of his new curing and sausage book. The Prague Powder you would find at a butcher supply store...there's gotta be several within 10 miles of where you are I would imagine; sounds like you are on good terms with your butcher--he may be able to get you a lb or so through his supplier. Just a thought.
