Subject: Chili Anyone?

We cooked 18 briskets yesterday for a crowd and when I was cleaning out the truck I came across the pan of burnt ends and trimmings from the day. Not wanting this good stuff to go to waste, I thought I would try a batch of chili.

For a pot that holds about 6l finished I used
2 large onions, chopped
1 head of garlic chopped
enough oil to soften the onions and garlic
a couple or three handfulls of chopped beef scraps from the brisket
4 28 oz cans of diced tomatoes
4 14 oz cans of black beans, drained
1/3 bottle (or so) red wine
150 ml chili powder
4 chopped chipotle browns
salt and pepper to taste

Its just about ready now and the kids have eaten about a quarter of it already. Can't wait to see what it will be like tomorrow after its cooled and reheated! YUM

Happy Sunday to all

Peter
