Hi Darren, I'm by no means an expert on brisket. That may take me at least another 20 years or so. I think the large offset can speed the initial part of the cook just by the amount of heat it produces. I find the initial temperature rise with the cooker running at 220 or so is very quick. The brisket gets to 140 or 150 then begins to slow down. My understanding is that the time from 160 to 180 is the critical period and slow is good.

No, you're not doing anything wrong if the finished product is good as far as I'm concerned.

I want to hear some more on brisket!
