Subject: Brisket - Am I doing something wrong?

All right folks, I admit that brisket is a complete mystery to me, having ony cooked a few of them, but after reading the posts below I've got to be erring somewhere.

Firsat of all I'm obviously not shopping right, I'm paying as much as $3.79/lb, but that's irrelevant.

Peter says below he's doing 10 lb. packer cuts in 10 hours. This Saturday I had a 7 lb. flat and that sucker took 13 hours! The most tender yet, but how could it have taken me so much longer? I don't get it.

I guess as long as it turned out good I really shouldn't complain about how it got there, but I'm still curious.
