Hi Darren,

I agree with the times given by others.

I generally cook briskets for approximately 1 3/4 to 2 hours per pound at 225 degrees, mopping with beer at every charcoal re-load. Normally I like to wrap in foil for the last 2-3 hours of the cooking time.

The foiling time may vary due to alcohol consumption/hunger. LOL ! I usually let it sit in the foil after cooking for a half hour or so before slicing.
