hiya Darren. in the past mine are around ten hrs also. the cooker running at around 235-250 never over. cook 7 hrs then foil until it hits 190-195, which should be around another three hrs, remove and let it sit for an hr or two in a cooler. at times when there has been to much libations around the cookers, it has gone in the cooler for 5 hrs and its still good. i also add a baste in the foil and it seems to keep moisture in the brisket. the next one i do i will be injecting to see the difference in moisture content at the end. i love brisket and if done right has a fabulous beef flavour. Rick Salmon from Basso's forum has been coaching me along for the last year or so on this particular beef cut. i like the outcome but not sure how it would do in comps although he has done ok.
