Subject: Pulled Brisket ???

G'Day all...

I was just wondering if anyone else has ever had this "problem" ?

On Friday, I done a small (4.5 lb) brisket point, that when done, was so tender that it shredded like pulled pork.

Here's the chronology of the day...

06:45 painted with mustard sauce and rubbed
07:15 placed on smoker over hickory (about 225 degrees)
09:15 first turn
11:15 turn and mop with beer (and a beer for me)
13:30 turn and mop with beer (ditto)
14:30 wrap in foil and return to smoker (another beer)
15:15 turn (another beer)
17:00 remove from foil, finish with bbq sauce on grill
17:15 remove from grill to cool

I've done several points, but none had shredded like this one. Not a bad thing though, as the meat was extremely tender and picked up a lot of sauce when it was done. I'm not sure if I prefer it thinly sliced or shredded.
