Hi all...

Never did check the internal temperature of the brisket on Friday. From 2:30 pm onward, the brisket was in foil in the smoker cooling down. I guess that helped to excessively tenderize the meat. As for the slicing, either against or with the grain made little difference. It still shredded, but man oh man was it ever good. One drawback to leaving in foil for so long was that there were no burnt ends to save for future baked beans. Oh well, I guess that it is back to the drawing board ! (many times for sure !!)
