Most recipes will warn against seperating the ribs before cooking as they'll tend to dry out... Are these cut into individual ribs because you actually do want them to render out and this method helps get more of that beef fat out? Have you tried them both cut and intact to see the difference or is this just the recipe you got and so you went with it? A&P has slabs of beef ribs once in a while in their 'econo-pack' section. They used to be in the 5-6 dollar range on the odd occasion they were made available, but anytime recently that price has been more in the 9-10 buck range!
