morning Roger. i have done quite a few in the past and used them for sandwiches. because the meat is so lean i have always brined-injected, rubbed, then cooked indirect at 225 until an internal of 160. i did no searing at all. i think Mike has also tried this with good success. i beleive that if you cook it to hot and quick it may really toughen up on you.
