I think you are right Reg, i`m going to skip the brine but go with the 225 indirect.

I have it rubbed really heavy with Montreal Steak Spice in the fridge.

Any idea as to how low it will take to get to 160º internal if cooked at 225º?

I`m doing french fries with gravy for the side dish, oh and ice cold Red Cap Ale in the stubby bottles...
