Sounds great earl, .......

a few questions for you...
what did you pay per pound for the piggy?

how much charcoal did you burn through?

did you run that high of a temp deliberately or was it difficult to control the temp?

did you put some sort of a lower grate in the coal drawers to allow the spent charcoal to fall through without smothering the burning coals?

I am making a 'warming' rack(for grilling) that fits into the rotisserie grooves in the upper structure as well as getting a new grease trough made, I find the grease trough gets too flimsy at those high temps(I run those temps PLUS), especially when I have butts on there with the pig.
When the cooker heats up the trough twists, with that I run the risk of the grease coming in contact with the fire, I don`t want to have to deal with a grease fire at a catering job....

The grease trough will have little legs on it to keep it stable along with angle iron running down the full length on both sides...

later
