Hi Roger:

The temp would range from 300F to 350F all during the cook. For the first 2 1/2hrs we keep the coals at the front on the cooker, partway through the cook, Daren added coals to the other side, again keeping the cools close to the corner & near the thick part of the pig. The temp was something that i had talked to Bruce about on Fri ( Thanks Bruce) we felt that due to outside temp & this being a new cooker, try to go high at first then drop to 250F part way through. We never got that low but will take another run at it soon.
Roger, i do not have a lower grill to put the coals onto but am looking at having something built so i get a better air flow. i will say that we did not have to much trouble holding the temp for the whole time it cooked the pig & i was happy with the way things turned out. Counting the the bags of briquets ,i would have to say that we went through aprox 12-14 small bags but didn't realy count them. Now as far as the lower drip pan, i was thinking of getting a s/steel one made up it the same way as the one that comes with the unit but now after reading what you had to say, i will have to re think things ( thanks) Are you going s/s on your heating rack or plain steel?
