Howdy Reg,

Long time no type...

I've had some success with brisket slathered with mustard, rubbed with a spicy rub, then smoked very slow, with the occasional mop with beer. (one glug for the beef and 11 for the cook)
I prefer to smoke it unwrapped (over hickory or apple) for approx. 3/4 of the cooking time, before wrapping in foil for the rest of the time, before slathering it with sauce, and finishing it for a few moments on the grill.

If you like baked beans, save some of the burnt end, and let it simmer with them.

I enjoy doing brisket, but it is just so time consuming, and usually adds to my alcohol consumption.(like that's a bad thing !!)
