Subject: brisket

well finally got the brisket i was looking for . just came back from the meat supplier with 43 lbs of St.Louis cut spares and two Black Angus beef briskets . the ribs look good but the brisket , which are flats by the way , are trimed right up ! almost zero fat . not exactly what i ordered but they probably think they did me a favor . even though this is my FIRST ever attempt at this i already know i'm in trouble with this lean cut . any of you brisket guys care to comment , please do . more than likely be trying the first one saturday . reg
