Day of Rest ?????????

Hello all,

Aaahhh Sunday, the day of rest. Too bad it's not for the cook !!!! I've been up since 6 this am firing up old smoky and prepping a pre-Simcoe Day brisket. It is a 6 lb'er so I figure it should be done 6:30- 7:00 this evening. I can't wait !

I thought that for a late lunch, I'll try someting new to me today. Has anybody ever tried "pork leg sirloin tip roast" before ? They look like mini footballs wrapped in netting. I've got them brining for a few hours, then I'll just wing them ! I'll give one to the neighbour, as he is my "smoker guinea pig", and I'll let you know how they turn out.
