現時吃大閘蟹在香港極之普及。蟹季期間,隨便走進一家酒樓食肆,都可以用很廉宜的價錢吃到大閘蟹(是否真的「大」就很難說了)。釵h食店更年年推出「大閘蟹套嚏v,每位二、三百元,就可同時品嘗蟹粉小籠包、蟹粉蒜茸包、蟹粉翅、清蒸大閘蟹(兩隻)等,可謂由頭「蟹」到落尾!
不過,真正的愛蟹者,還是一定會選擇把大閘蟹買回家自煮。此舉當然會比在外面吃便宜若干,但真正的原因,卻非為了省錢。
有沒有留意到,你在外面食店吃到的清蒸大閘蟹,往往都只有雄蟹,而沒有雌蟹?究其原因,相信在於雌蟹的蟹膏較硬身,像膏蟹的蟹膏,適合用來拆蟹粉,於是所有雌蟹都被食店保留,化成蟹粉,以其他菜式出現在大家面前。反觀雄蟹的蟹膏則軟軟的很黏口,不宜造蟹粉,只宜清蒸上桌。
然而愛蟹之人,自然想同時品嘗雌蟹膏與雄蟹膏的不同口感啦!食店吃不到雌蟹,唯有自行到超市或街市的售蟹專柜選購,買回家自行烹調了!
給你一道貼士:吃大閘蟹時,以每人吃三隻為最適宜,最好是一雌二雄,先吃雌後吃雄,如此的口感最佳!
