Larger tires will throw your speedometer off, so if you're going "65" on the speedo, you're more likely doing 70 on the ground. Regardess of indicated speed, the tach will read the same for a given speed for any size tire.
Note that larger tires will make for a noticeable loss of perceived power and actual acceleration, but if you're prepared to give that up for a more relaxed cruising RPM when you finally get to it, it's an option.
You have 265/70-15 (29") stock tires, you could easily step up to a 31x10.50-15 tire with no trimming or the like if you stick with the stock wheels. There are no aftermarket that position the tire in the same relative location, so they reduce your choice in sizes unless you want to trim a little, but a 31x10.50 is still an easy fit as long as your wheels aren't too far from the stock dimensions.
