Dis is awful good when it's waiting to cool...

Appley sauce muffins

8 tbsp. butter (or in udder words, 1 stick)
1 cup of brown sugar
1 egg (don't get excited an' eat it raw...)
2 cups of flour (not smelly kind)
1 tsp. baking powder
1 tsp. baking soda (me, I never know the diff)
1/2 tsp. salt
1 tsp. cinnamon (mmmm!)
1/2 tsp. powdered ginger or cloves
1 cup of applesauce
1/2 cup raisins (optional)
1/2 cup chopped nuts

Okay, brace yourself...

1. Preheat oven to 350 degrees Farenheit. Line 16 cups of muffin tins with paper baking cups (you know, the kind you have on your cupcakes!)
2. With the electric mixer, cream the butter in the mixing bowl until soft and light. Beat in the sugar, a little at a time (please), until the mixture is fluffy. Beat in the egg.
3. Sift together the flour, baking powder, baking soda, salt, cinnamon, and ginger/cloves into a small bowl, then mix them into the batter (in the mixing bowl) on low speed.
4. With the large spoon stir in the applesauce, raisins, and chopped nuts.
5. Spoon the batter into the prepared muffin tins, filling each 2/3 full. Bake about 20 minutes, or until muffins are golden and toothpick comes out clean.
6. Remove the muffin tin from the oven and remove muffins from tin!

Ha, you thought I couldn't be so serious, huh? Well, so there, I proved you all wrong! Ahem...anyway.
