Please note: this is for small fish such as brook trout, sea bass, and mackerel. Oh, and boneless fillets. So, don't try to do this with a whale, okay? Thanks.

Panfried Fish
4 small whole fish, heads and tail removed (please), or one and a half lb. fillets
1 and 1/2 teaspoons salt
Ground pepper
1/3 to 1/2 cup of flour or cornmeal
6 tbsp (in udder words 3/4 stick) of butter
2 tbsp of veggie oil
1 lemon
2 tbsp chopped parsley
Okay, here goes...
1. Preheat the oven to the lowest setting ('bout 200 - 250 degrees Farenheit) and place the serving platter in it to get warm.
2. Wash the fish in cold water and dry lightly with paper towels. Sprinkle salt over the fish and, if you are cooking whole fish, rub some salt inside each cavity. Grind alittle pepper over each fish or fillet.
3. Spread the flour or cornmeal on a peice of waxed paper. Place one side of each fish or fillet on the flour/cornmeal, turn over to coat the other side, then shake off excess. Repeat for the remaining fish.
4. In the skillet, melt the butter over high heat and add the oil. When the fats are hot and begin to brown, add the fish, lower the heat to medium, and panfry the fish on one side for 2-3 minutes. Using the wide spatula, turn each fish over carefully adn panfry on the other side for 2-3 minutes. If the frying pan can't hold all the fish at the same time, fry two pieces at a time; you may need to add more butter and oil for the second batch. Using the spatula, carefully transfer the cooked fish to the heated serving platter.
5. Cut the lemon in half and squeeze the juice into the frying pan. Stir with a wooden spoon to incorporate the pan drippings and cook for a minute or two. Spoon teh lemony pan juices over the fish on the serving platter, and sprinkle with chopped parsley.
Now, see, you walked into this thinking "eeww", but now you see it's utterly delicious!! Hey, don't drip your saliva on the keyboard! Here, have a kleenex.
