2 1/2 cups of all purpose flour
2tsp of baking soda
2tsp of cinnamon
1 tsp of salt
1 cup of vegetable oil
2 cups of sugar
4 eggs
1 tsp of vanilla
3 cups of finely grated carrot
1 cup of chopped nuts
Frosting (optional)

Preheat oven to 350'F or 180'C. Combine soda, flour, cinnamon and salt together in a bowl, and set aside. Using a mixer, blend OIL SUGAR EGGS AND VANILLA UNTIL LIGHT, then blend in carrots and nuts. Blend the dry engredients that you set aside with them 1/3 at a time. Pour batter into a greased pan and let bake until it lightly springs back when fingers are pressed onto it. Cooking time varies at about 50 to 60 minutes
