You know, when I think about it, it must have really been difficult for the writers to write fantasy consistently.

I don't think it was all that difficult for them, mostly because after awhile, I think they stopped trying. Moreso on BtVS, it was a rare case where they made the details of vampire physiology a significant plot point. It usually worked the other way around - the Vampire Traits varied depending upon the needs of the plot, and on the stunt/set resources available to the production staff.
