I love Alfredo, so I think I might be crazy enough to try it over the weekend.

Spinach Dip:
- 1 package frozen spinach (thawed, chopped if not already in bits and squeezed dry)
- 1 cup sour cream (low-fat can be used)
- 1 cup mayo (or Miracle Whip salad dressing; low-fat's ok too)
(proportion of sour cream to mayo can be adjusted to taste)

Optional: for crunch, add chopped water chestnuts. For extra tanginess, add in one small packet of dried veggie or leek or onion soup mix. For decoration, add chopped red pepper.

Mix. Chill for at least 2 hours. Makes about 3-4 cups.


I made it for a BBQ and served it in a hollowed out round bread, using the scooped out bread for dipping. The fun thing is that you can rip apart the bread bowl afterwards and eat it; that's usually a hit with kids. (I was feeling Martha Stewart-y. Yikes.) Tortilla chips or crackers work great too. I think you can use cream cheese instead of either the cream or the mayo, but it would make the dip harder to dip.

And yes dammit, Mark Burnett is still discriminating against Canadians. Boooo.
