I think I'll probably end up going that route with something like this:

My only question though is, I have 30amps/120v coming from the dock, my inlet port is also 30amps, can I splice one of these 15amp chords directly to the 30amp inlet port?

I've looked at some 30 to 15 amp "adapters" but they just look like a piece of cord with different plugs on each end. doesn't look like they do anything but connect the wires.
