I'd say its relatively uncommon that folks rebuild from a bare hull, radically departing from what they started with.

I'm working on an 83 footer that required a complete gutting and every frame replaced in her... Sledge hammers and about a billion sawzall blades later there is only one bulkhead that obscures the view of the stem while standing beside the rudder posts.

But really, what looks like a great idea on one boat doesn't have the space to fit in another. I love the idea of a athwart ship nav station on my Triton, but there just isn't enough beam or height from the turn of the bilge to the shear for anyone to sit unless they are a pygmy.

I cut out the bulkhead that divided the head and hanging locker from the cabin, as the stock length bunks were to short for me. Flat footed on one side, and rubbing a bald spot on the other. I'm moving the head up into the V-berth, and thought about moving the galley forward... But if I do, there will be no standing head room at the galley. Gotta sit down to cook, and the v-berth is permanently two singles or just a work shop.

My shoulders got stuck going through the doors on the Triton, so I took them off. Of course then there was no privacy...

On the 83 footer there isn't standing head room in the lazarette for a work shop, unless you are under 5 feet tall. I'm in the process of moving the steering gear around, as the chain from the wheel runs through where a walkway is going. Why? There was a bath tub under the box that enclosed the chain, and that didn't allow one to take a shower standing up. The bathtub had to be way up the side of the hull to give enough room for a marine head.

Build a shower where the old walkway was... now redesign the steering cables and add a 90 degree gear box to get clear walkway.

Every time you change something, a thousand other things are influenced. You have to have the foresight to figure out what will be effected for the positive, and what will be the next big pain in the ass to figure out.

Folks get discouraged after the first big screw-up on projects and bring in professionals. Or just never pick up the sawzall and take a chance... If you enjoy sailing more than working on boats for the sake of working on boats, its worth putting up with the interior faults until you snap. Hell, sell the thing and find what you really want from the start and your life will be less about grinding fiberglass and more about hoisting sails.
